Ingredients:
For the Chai Latte Whoopie Pies:
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground cloves
– 1/4 teaspoon ground cardamom
– 1/2 cup unsalted butter, softened
– 1 cup brown sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1/2 cup buttermilk
– 1/2 cup chai latte (prepared, cooled)
For the Cream Cheese Filling:
– 8 oz cream cheese, softened
– 1/4 cup unsalted butter, softened
– 2 cups confectioners’ sugar
– 1 teaspoon vanilla extract
Instructions:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and cardamom. Set aside.
In a separate large mixing bowl, cream the butter and brown sugar together until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
Alternate adding the dry ingredients and the buttermilk to the wet ingredients, beginning and ending with the dry mixture. Mix until just combined. Gently fold in the chai latte.
Using a spoon or a piping bag, drop tablespoon-sized portions of batter onto the prepared baking sheets, spacing them about 2 inches apart.
Bake the whoopie pies for 10-12 minutes or until the tops spring back lightly when touched. Allow them to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Making the Cream Cheese Filling:
In a medium bowl, beat the cream cheese and butter together until smooth and creamy. Gradually add the confectioners’ sugar and vanilla extract, mixing until well combined and smooth.
Assembling the Chai Latte Whoopie Pies:
Once the whoopie pies have cooled completely, spread a generous amount of the cream cheese filling onto the flat side of one whoopie pie. Top it with another whoopie pie to create a sandwich. Repeat with the remaining whoopie pies and filling.
Serve and enjoy these delightful Chai Latte Whoopie Pies with a hot cup of chai tea for the perfect pairing of spiced flavors and creamy sweetness.
